This Classic Old Fashioned Chicken & Dumpling Recipe was inspired from one of my prize possessions. It is a cookbook put together in a 3 ring binder by my mom in the early 80s. In it is Anne Porter’s recipes, my fraternal grandmother. I have such fond memories spending hours in her kitchen!
This is My Family’s Gluten Free Version of Grandma Porter’s Old Fashioned Chicken & Dumplings Recipe. It is a Winter Comfort Food Classic. With All The Aromatic Herbs it is Great For Preventing or Over-Coming a Cold or Flu. You’re Sure to Love This One As Much As My Family Does!

Ingredients
- 1 Tbsp Olive Oil (Extra Virgin)
- 2 Cloves Garlic (Fresh)
- 1 Medium Onion (Chopped)
- 4 Sprigs Thyme (Fresh)
- 4 Springs Rosemary (Fresh)
- 2 Boxes (32 Oz) Chicken Broth or Stock (Gluten Free - I Used Swanson)
- 1 Cup *White Wine (*Optional – I Used Pinot Grigio)
- 2 Cups Celery (Chopped)
- 2 Cups Carrot (Chopped)
- 2 Cups Cooked Chicken (Chopped)
- 3 tbsp Corn Starch (Gluten Free – I Used…
- 3 Oz Filtered Water
- 1 ½ Cups Flour Blend (Gluten Free – I Used Pillsbury Best)
- 2 tsp Baking Powder (Aluminum Free – I Used
- ½ tsp Sea Salt
- 2/3 Cups Milk (I Used 1% Acidophilus Cow’s Milk)
- 2 tbsp Oil (I think I used MCT)
- 1 Egg Beaten
Instructions
- Heat large stock pot while prepping your items. Add oil then sauté over medium heat all aromatic herbs. Let Onions & garlic cook & caramelize. Meanwhile chop your celery & carrot.
- Once your onions have some good color on edges but translucent, it is time to add your stock or broth. Deglaze your pot with a little of the broth or stock scrapping the brown bits off the bottom.
- Let it cool slightly & pull out the stems from the aromatic herbs. Next finish adding all the stock or broth & wine. Bring up to a boil & add chopped celery & carrots. Let veggies simmer until desired doneness while chopping the cooked chicken. The veggies will need at least 20-30 minutes to get soft. At this point you have what looks like soup.
- Add your cooked chicken. Make a gravy by putting 2 heaping tbsp. in a glass with about 3 oz of water stir into the pot. Make sure it is lightly boiling & gravy is thickening.
- Stir dry ingredients in small mixing bowl. Next add wet ingredients & mix until dough forms.
- Drop dough balls about a tbsp. in equal sized into softly boiling chicken base a few inches apart. When the entire pot has been dotted with dough cover & boil for 15 minutes. DO NOT LIFT LID UNTIL DONE!
