This delicious chewy oat chocolate chip cookie has become the family’s #AllTimeFavorite! For example, over the last few weeks, I am baking a batch every 2 or 3 days.
Sarah, my youngest twin was who I had in mind as the inspiration for this recipe. Above all I want to help get more fiber and digestible plant protein in her diet. Therefore, I began encouraging her to drink a fiber cleansing product before bed. Most importantly, I was want to help her clear up her acne prior to major events coming… Prom, Spring Break, Meeting Her “Boyfriend” for the First Time, Graduation you know some important events coming up. However, my attempts getting her to take a fiber supplement were unsuccessful!
That’s when I knew… “I have to get creative with it…?” I know, I’ll get more fiber in her through baked goods. But most importantly, she won’t be able to resist!
Cookies For Breakfast Anybody?!
Above all, Sarah loves sweets and carbs. Therefore, cookies are always a huge hit! Plus, she isn’t always ready to eat before leaving for school. So these are perfect as an easy grab and go snack like breakfast.
Now before ya’ll go havin’ a conniption fit ’bout eatin’ cookie’s for breakfast… Let me just ask you… If I were any ole southern Momma sending her kids off to school eating “Pop-Tarts” Few would take issue with it – But tell somebody you’re feeding your teenagers cookies for breakfast… That they’ll take issue with. But I digress!

Why Sprouted Organic Oat Flour
I also developed this recipe after recently learning that Sprouted Organic Oat Flour is the only “virtuous” flour for our entire family. In other words, foods that muscle test as “virtuous” for everyone. As a result, I began looking to convert some recipes with oat flour. This delicious oat chocolate chip cookie is perfectly well balanced between sugar & complex carbs, protein & high-quality fats.

As soon as they come out of the oven, I press them down to flatten them a little. It makes a perfect grab and go breakfast. It will be so much healthier than any packaged breakfast bars!
If you stick with quality ingredients it will be loaded with fiber, very filling & satisfying but most importantly nourishing!
Ingredients
Dry Ingredients
- 2 Cups Oat Flour (Gluten Free)
- 2 Scoops Love and Peas Vegan Protein Powder
- 1 Tsp Baking Powder
- 1 Tsp Baking Soda
- 1/2 Tsp Sea Salt
Wet Ingredients
- 3 Eggs
- 1/2 Cup Erythritol
- 1/3 Cup Grade A Maple Syrup
- 1/4 Cup Melted Coconut Oil
- 2 Tsp Vanilla Extract
Stir in Last
- 1 Cup Gluten Free Rolled Oats
- 1/2 Bag of Semi Sweet Chocolate Morsels
Instructions
- Preheat Oven to 350 Degrees
- Measure & Mix Dry Ingredients in Large Mixing Bowl & Set Aside.
- In a Separate Small to Medium Bowl, Crack & Beat Eggs with the Maple Syrup, Erythritol, Cooled Melted Coconut Oil & Vanilla. Yum!
- Make a Well & Pour your Wet Ingredients into Your Dry Ingredients & Hand Mix Until Dough Formed.
- Next Stir in Your Rolled Oats. Dough Will Be Thick & Sticky.
- Last Stir in 1/2 a Bag of Chocolate Chips. Seal Tight For Your Next Batch! Because... I Promise You, There WILL BE A NEXT BATCH!
- Drop Dough by Tablespoon About 1 1/2 Inches Apart on Parchment Lined Baking Sheets. I Drop a Dozen Per Sheet. I Use my Tablespoon Cookie Dough Scoop to Get 28 Perfect Sized Cookies.
- Bake For 12 Minutes or Until Golden Brown
