Well, Thanksgiving is almost here – Chances are you’re going to need a homemade keto cranberry sauce if you are eating low carb. I don’t think you can have a proper Turkey Day without a side of some kind of cranberry sauce. I can just hear Lillian (my Grandmother on my Mom’s side) …”Psshh” the sound of her displeasure at the thought!
Of course, all the “easy cranberry” or the stuff that comes in a can is loaded with carbs & SUGAR! Yes, how easy is it to just pop open a can of jelly & slice it up & serve it?! But those of us who are eating ketogenic that isn’t even an option. I mean come on man… We got to save our carbs for something worthwhile like a little mashed potato right?! You do know you can make gravy with cheese of all things?! Who knew?
After you taste this delicious ketogenic whole cranberry sauce which has no sugar & low carbs you’ll never go back to that crap in a can! It really is super easy to make this homemade whole cranberry sauce packed with anti-oxidants!
Ingredients:
- 2 tbsp. Butter
- 1 Bag (12 Oz) Ocean Spray Fresh Cranberries
- Filtered Drinking Water
- 1 Cup+ Swerve Confectioners or Other Erythritol
- 1 squeeze Liquid Stevia (I used Pure Via)
- Handful or 2 of Blackberries (Cut in Half or 3rds)
- 1/2 tbsp. Vanilla Extract
- 1/2 tsp Orange Extract
- 1/4 tsp Cinnamon
- Pinch Sea Salt
Instructions:
Melt Butter in medium sauce pan on low-medium heat. Add bag of fresh cranberries & sauté for a minute or 2. Next add filtered water just until the cranberries are just covered. Add Erythritol / Swerve & liquid Stevia. Go easy on the Stevia as too much will add to bitterness / tartness of the cranberries. Bring to boil on medium heat. Reduce & simmer for 10 to 15 minutes until cranberries split, breakdown, reduce & start to thicken. Taste as you go along for sweetness vs tartness adding a tablespoon at a time until desired sweetness. Once a good consistency has been reached, cut the blackberries, add to the cranberries & simmer on low for another minute or two. Last Remove from the heat & stir in Orange Extract, Vanilla, Salt & Cinnamon. Pour into nice serving bowl & chill in the refrigerator for a few hours or make ahead. This will be a perfect side for your turkey or ham for the holidays. Your whole family will gobble up this absolutely delicious homemade fresh cranberry sauce during your Thanksgiving celebration!
